October is the perfect time for hearty, nourishing meals. Here are some carefully crafted Mediterranean-inspired recipes with step-by-step instructions and cooking tips to help you bring the best of autumn into your kitchen.
Roasted Butternut Squash with Feta and Pomegranate
This dish is all about contrasts: the sweetness of roasted squash, the saltiness of feta, and the juicy pop of pomegranate seeds. It’s vibrant, healthy, and makes a stunning side or light main dish.
Ingredients (serves 4):
- 1 large butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1 tsp ground cumin
